I notice that most eggs release bubbles from the end of the shell as they're
boiling; that would change the density.

When I boil eggs, I cool them under cold water, which must seep into
the cavity, so I don't find any difference in floatation.
If, however one dry cools an egg, it might lose some water vapor
and be lighter.

So that method doesn't work to test for raw eggs, unless you know
the cook.

I always put a bit of dried onion skin in the water to color the eggs.
Red onion sometimes makes a pretty yellow.
