As posted (probably on physlrnr-l) some labs are possible. Perhaps that's what you (AL) include in projects. As far as tests “open book”, perhaps not as “real” tests, but another learning method, like end of chapter questions?

Remote work not graded, I agree is good. What they do remotely will be reflected in their work when they return, which should be stressed in the remote work assignments.
