I was planning to use honey. Does anyone have any experience with this?

Does beekeeping experience count?

Which brand honeys are most viscous?

Check the density.

You can lower the viscosity (and density) by adding water.

Viscosity is a strong function of temperature.

And do I have to worry about
crystallization?

Not much. If you see crystals, warm it gently until *all* the
crystals go away. They won't re-form without a seed crystal.

Other viscous (and relatively clear) fluids?
