There are more than 100 web sources available detailing
Protimeter "digital Hygrometer" devices.
They offer photos and prices, but details of the working
principle are much harder to find.

I started to suppose a conductimetric method when I read that
hygroscopic or conductive materials can give false readings,
but I finally read that an RF loop is held close to a surface
of interest. I really don't think that a proton spin signal is
being monitored, but possibly the damping or frequency pulling
of a (pulsed?) tuned circuit may be involved.
