I assume that your single-pole double-throw switch consists of
three contacts in a line with the knife blade attached to the
center contact. If so, just move one of the outer contacts so it
is separated from the other outer contact by a distance that is
slightly less than the width of the knife blade.

I knew I left something out. The switch should be a knife switch, like the
one you mention. Also, I would prefer an off-the-shelf switch, not one I
modify.
