You might try a physical chemistry text. We certainly did our share of
phase diagrams when I took that course.

That was the first place I looked. The examples in p-chem texts are
all chemicals that I've never heard of.

I'll reccommend a Dover reprint of 'Phase Rule' by A. Findlay, revised and
enlarged ninth edition by Campbell and Smith. 1951 copyright by Dover.

This paperback was a text (one of several) in our 1st year Chem course at
Duke in the '60's. It's got more examples than you need and since it was
originally written at the turn of THIS century to expound on the work of
Gibbs, it contains much related to geology and metalurgy.

(I didn't see NaCl + H2O at first glance)
