I was interested enough by the thread to try shooting a video clip of a plucked zither string using a Nikon point n shoot camera (S6100).
Disappointing to find a video depiction of the moving string similar to what I could see: a motion-blurred string executing a fundamental smoothly increasing from the end-nodes.
