It wasn't as cool as it sounds -- I allowed them to select available  
times from a drop-down list (one of the form options), then when  
someone asked for a time slot I edited the form and removed the time  
from the list. It required constant attention to prevent double  
bookings (not that there was a mad rush to sign up, there were no  
problems in this regard).
