I seem to have it that the direction in which organisms evolve
is (always?) to greater complexity with time.

Usually, but not always. When environmental conditions change, an organism
might develop more complex structures, but then, when conditions change again
or even change back, it might be possible, and energetically favorable, to undo
the change or evolve a simpler structure. Parasites, for example, are often
simpler than some of their ancestors. Also birds that can fly have sometimes
lost the ability to fly.
