There is a nice brief discussion of early science in Galileo's Finger by
Peter Atkins - chapter 5.

"Thales of Miletus, (c.500 BCE) regarded in the popular imagination as the
father of philosophy, finding fossil sea shells up mountains, leapt to the
conclusion, shortly before falling to his death, that everything was made of
water."

Empedocles came later - c. 492-432 BCE.
