I once bought a high speed stirrer that "whips" even skim milk, by causing
it to capture bunches of air (so they say and it seems so). Far from
whipped cream results, but I was pleasantly surprised.

For some, fall brings about thoughts of pumpkin pie topped with whipped
cream. Our department secretary asked me how heavy cream, when whipped,
becomes stiff. Any ideas?
