At our local amusement park, we have had good success using
accelerometers on the "Sea Dragon," a boat-shaped ride that swings back
and forth. About 2.5 g at the bottom, and near 0 g at the top.

Other ideas (untested by me): a playground "merry-go-round" - put
accelerometers at different radii; a swing; use accelerometer as an
indirect measure of friction by measuring the acceleration of a block as
it slows to a stop.
