Keith:
How about a solar study? Photograph the Sun thru telescope (with filters
of course) everyday at about the same time for a month or so. If there are
several sun spots at different lattitudes, some interesting things can come
about when one tries to estimate the rate of rotation of the sun.

You can do this experiment by Internet, too. Daily images of the Sun are
archived at
http://www.sel.noaa.gov/images/index.html
You can see the sunspots and plage regions rotating across the surface of the
Sun day by day.
