One thing is that to work best the tires need to be warm. In road and oval
racing, their performance increases as the tire warm and bits of gravel
actually stick to the surface of the tires.

It is also the case that even with "street" tires if you increase the
engine output sufficiently, it will be able to break the tires free of the
road. By going to wider tires the break-free torque at the road surface
goes up allowing one to make use of a greater range of available torque
from the engine. Why? I'm not sure, but tires are not rigid objects by
any means.
