Doppler demo 1: (A little anarchistic)
Get a piezzo-electric buzzer. 9V dc battery. Put it into a childs
soft ball. Throw it around the room. It warbles.

I have a small slit in my ball, I set it going, and just stuff
the thing inside. Don't even worry with a switch. I used it in a
talk at a science conference recently - the thing landed in the only
small container of water in the room. It still went.

Modifications: (Untried) Connect the same device to an arrow. Fire
the arrow (with due regard to the location of your students!!)

Doppler Demo 2 (Less anarchistic)
Put a speaker in a plastic beaker and while it is
connected to a signal generator - whirl it round your head. Radius
about 2m - f about 600 Hz (I think from memory) Drill holes in the
bottom and attach with screws - will protect speaker.
